New James Kittow Butchery Academy is ‘a cut above the rest’

A new butchery academy for Cornwall has been launched to help improve the prospects and knowledge of butchers in the county.

Cornwall College Business (CCB) is launching the ‘James Kittow Butchery Academy’, which wi;; deliver specialist butchery apprenticeship training from the heart of Cornwall.

In partnership with Duchy College, James Kittow Butchers will develop specialist butchery skills training days as part of the Level 2 Butchery Apprenticeship programme, from its cutting plant and retail premises at Kilhallon Farm, Par, near St Austell.

Roger Clarke, Team Lead for Agriculture and Food at Duchy College, said: “Employers taking on a Level 2 Butchery Apprentice can be confident that their apprentice will have experienced first-hand the skills, knowledge and behaviours needed to be successful in a modern butchery business, during their time at the James Kittow Butchery Academy”.

Butchery is one of the oldest crafts in the world, and James Kittow butchers is a prime example of a business where innovation and tradition go hand in hand, employing people along the whole farm to fork supply chain.

Established in 1880, James Kittow is a fifth generation butchers and graziers, with a modern, progressive food processing business specialising in the production of raw meats cuts, cooked meats and value added products for catering and retail outlets.

James Kittow added: “Because we actively promote Good Manufacturing practices here at James Kittow, Duchy College butchery apprentices will go back to their employers understanding how important it is to ensure that product quality and food safety standards are consistently high”.

The academy has been designed to share the skills learnt over several generations, to help future proof the industry across Cornwall for many years to come.

As well as giving Duchy College butchery apprentices a hands-on opportunity to learn knife skills, butcher delicious cuts of quality meat and learn about the quality control process, they will also learn about the journey from farm to fork.

The James Kittow Butchery Academy will prepare apprentices for a rewarding career in the butchery industry with their employers, with a sound understanding of a range of meat species, and the various techniques needed to process and produce quality meat products.

James Kittow Butchers will have a stand at the Duchy College Open Day weekend at Stoke Climsland on 24th and 25th June, plus the apprenticeship recruitment team will be on hand to answer any queries you may have.
